Barefoot Contessa's Tuna Tartare 

3/4 lb super fresh tuna steak diced into 1/4" cubes

1/4 cup olive oil

1 lime, zest and juice

1/2 t wasabi powder

1 T soy sauce (I use low sodium)

1 T hot sauce

salt and freshly ground pepper to taste

1/4 cup minced scallions

1 ripe avocado, diced into 1/4" cubes

1/2 T sesame seeds

Combine all ingredients from olive oil to scallions. Pour over tuna and mix well. Carefully mix in avocado and let sit in refrigerator for an hour or two for flavors to blend. Sprinkle with sesame seeds before serving.

Buffalo Shrimp with Blue Cheese Dip

For the Shrimp

1 lb large shrimp, peeled and deveined

3 T minced garlic

1/2 cup chopped parsley

1/4 cup olive oil

1/4 cup sherry

4 T hot sauce

2 T lime juice

Blue Cheese Dip

1 cup crumbled blue cheese

1/3 cup olive oil

juice of 1/2 lemon

Saute shrimp with olive oil and salt and pepper. While shrimp cooks mix together remaining ingredients (garlic through lime juice). When shrimp is cooked through (don't over cook it--it's ready as soon as it turns pink) toss with the sauce. Make dip by mixing blue cheese with olive oil and lemon juice.
